A Scotch egg is a boiled egg wrapped in sausage meat, coated in breadcrumbs, and baked or deep-fried.
They are eaten as a snack and can make a good appetiser and picnic food.
Here are the Ingredients;
- 7 eggs, hard-boiled
- ½ pound low sodium breakfast sausage
- 1 cup seasoned breadcrumbs
- ½ cup grated parmesan cheese, divided
- Salt and pepper to taste
- Vegetable oil for frying
Preparation
Step 1
Pour oil into a large pan and begin preheating on medium-high heat.
Step 2
Place about 1 tablespoon of sausage, evenly, around each egg, forming a thin meatball-like layer around the eggs.
Step 3
Place breadcrumbs and ¼ cup parmesan into a shallow dish and gently roll eggs the in mixture until fully coated.
Step 4
Fry eggs in two batches, for 5 minutes. Then drain on paper towels and season with salt and pepper.
Serve on cocktail or beverage of choice.
