My first time having Athola was at The Branch restaurant along Moi Avenue, opposite KTDA house in the Central Business District.
I must confess I fell in love with the cuisine, and I had to consult the chef to give me tips on how I can make the delicacy in the comfort of my home.
‘Athola’ simply means roasted or grilled. In this case, cooked Nyama Choma.
This dish, according to chef Mark Muchiri, is a delicacy that is enjoyed mostly in Nyanza and Western counties in Kenya.
Here is how you can prepare the dish.
Ingredients
- 1kg Roasted or grilled beef, cut in chunks (nyama choma)
- Ginger
- Garlic
- Tomatoes
- Knorr cubes
- Cooking oil
- Onions (optional)
Preparation
Step 1: First, you roast or grill the meat.
Step 2: Pan fry garlic, onions tomatoes, and ginger, all cut into small chunks or minced.
Step 3: Add your cubes and salt to taste then finally add the meat and let it simmer.
Serve hot and enjoy over managu and brown or white ugali.
