Mutura originated from the Gikuyu lands of central Kenya.

It is mainly produced during family gatherings and events.

It consists of an intestine-encased mixture of pieces of cow or goat meat, tripe, and cooled blood that's flavoured with onions, salt, pepper, and chilli.

Mutura is a street food most Kenyans love and it is affordable although being sold on the street some prefer homemade. 

To make your homemade mutura you need some ingredients.

Ingredients 

  • 500 grams of beef that are cut into small cubes or pieces
  • Three tablespoons of pure mountain herb-infused canola oil 
  • One tripe or cow intestine 
  • One cup of chopped onions 
  • Two tablespoons of red chilli
  • Two tablespoons of minced garlic 
  • Salt and pepper to taste 

Preparation 

Step 1

Cook onions and garlic using the canola oil, then add red chillies. When done cool completely.

Step 2

In a bowl add the chopped beef, cow blood, salt, and pepper. Then add the cooled onions with garlic and chilli mixture and combine.

Step 3

Stuff this mixture inside the uncooked stripe and tie on both ends.

Step 4

heat a grill and cook the matura over medium-high until it turns golden brown, brush canola oil to avoid drying.

When done with your preparation serve your mutura and enjoy it with ugali and salad.
