How to make traditional Kenyan Mukimo in few simple steps

Traditional maize mukimo

Mukimo or Mokimo is a meal that is popular with the Agikuyu community.

However, the meal is served in homes, hotels and restaurants across the country and even across some East African countries like Rwanda, Tanzania and Uganda.

The dish is mainly made of potatoes and is prepared at weddings, birthdays, Christmas, burials and other events.

The dish is served with veggies or meat and it is a delicious meal for vegetarians.

Ingredients

  • Boiled Irish potatoes
  • Fresh pumpkin leaves or Spinach
  • 3 Cups of soft maize or French peas (boiled)
  • Onions, finely chopped
  • Vegetable oil
  • Salt

Preparation

Step 1

Put the pumpkin leaves or spinach in a blender, add a little water and shred for 30 seconds.

Step 2

In a pan, fry the onions till golden brown, add desired spices then set aside.

Step 3

In a sufuria, mash together the maize and potatoes together using a wooden stick until all is combined.

Add the blended spinach to give colour and flavour.

Step 4

Over medium heat, mix together the mashed potatoes and onions. Mix well.

Step 5

Serve while hot with beef, cabbage or matumbo.
