Avocado toast is a healthy snack in its own right, loaded with fiber and unsaturated fats.

It can be prepped and cut up into small bites for easy eating.

To prepare it, you are required to have the following ingredients:

  • One avocado 
  • One scallion roughly chopped 
  • Half a glass of lemon 
  • Extra virgin olive oil 
  • Cayenne pepper 
  • Curry powder 
  • Salt
  • Two pieces of sliced bread

Preparation 

Step 1

Ensure your avocado is ripe for gentle squeezing.

Step 2

Cut the avocado length way into two halves and discard its seed. Take one half and cradle it in the palm of your hand.

Step 3 

Draw a small paring knife through the flesh, creating a crisscross pattern. Repeat with the other half.

Step 4

Loosen the flesh by running a spoon between it and the skin, and scoop it into a small bowl.

Step 5

Trim, then rough-chop one scallion and add it to the bowl. Add the lemon juice, cayenne pepper, curry powder, and salt.

Step 6

Gently mash the ingredients together, adding salt and pepper to taste.

Step 7

Spoon avocado mix onto two slices of toasted bread. 

When done serve your avocado toast on a clean plate and enjoy it with any beverage of your choice.
