Ndengu stew

Green grams are one of the common dishes to prepare. It is mostly known as 'ndengu' in Kiswahili.

They have a unique taste and are always an alternative to other legume dishes like beans.

Adding ingredients such as carrots enhance a sweet flavour.

Ingredients

  • 1 cup of green grams
  • 2 tomatoes
  • 2 carrots
  • 1 onion
  • 1 clove of garlic
  • Garam Masala
  • Cooking oil
  • Coriander

Step 1

Wash the green grams and boil them for 1 hour till soft. Drain the water after.

Step 2

Cut the vegetables and grate the carrots, and set up a pan with cooking oil to fry the onions. After they turn brown, add garlic.

Then add the carrots and tomatoes.

Add 1 tablespoon garam masala for a thick soup and after a few seconds, add green grams and let it simmer for 5 minutes.

Step 3

Add coriander to garnish the green grams.

Step 4

Serve with chapati or rice for a full dish.
