Here is how you make simple and good mutton curry with basic ingredients and simple steps

Mutton curry also known as mutton masala is a dish prepared from goat meat originating from the Indian subcontinent but popular in many countries.

Mutton curry Is a one-pot dish where mutton is marinated and cooked with plenty of spices and herbs

Ingredients

1 kg mutton (marinated), bone-in, cut into medium-sized pieces

1 teaspoon turmeric 1 tablespoon

Salt 4 tablespoons cooking oil

1 teaspoon fennel seeds

1 Bay leaf

1-inch Cinnamon stick

3 Cardamom pods

3 Cloves

4 Green chillies

3 large Onions, finely chopped

1 tablespoon Ginger Garlic Paste

5 large Tomatoes, finely chopped or pureed

1 tablespoon Coriander Powder

4 tablespoons Meat Masala

2 Potatoes, quartered (optional)

1/2 teaspoon Garam masala

1-inch piece Ginger, julienned

1 tablespoon Ghee, or Butter

Method

Step 1. Marinate your mutton meat and set it aside while you prepare everything else

Step 2. Heat oil and saute fennel seeds, bay leaf, cinnamon, cardamom and cloves for a minute.

Step 3. Add two green chillies, onions and ginger garlic paste. Cook this for 10-12 minutes stirring occasionally till the onions are golden brown.

Step 4. Add tomatoes, coriander powder, meat masala, and the remaining salt and cook for 5 minutes till the tomatoes break down slightly.

Step 5. Add mutton and two cups of water and put the lid on. cook on for 20-25 minutes until the meat is tender.

Step 6. Add potatoes and cook for another five minutes

Step 7. Add more water if the gravy is too thick. Stir in garam masala, remaining green chillies, julienned ginger and ghee or butter and simmer for another 3-4 minutes. Check and adjust seasoning.

Let the curry rest for 15 minutes before serving.

You can serve your mutton curry with plain rice it also goes well with kachumbari on the side.
