In Summary

• Because agar-agar has no taste or odour, it completely absorbs any flavours you bring to the dessert. It doesn’t try to compete with its own flavours.

• Agar-agar is a healthy, vegan substitute for gelatin. It is a good source of many minerals such as magnesium, iron, vitamin B9, vitamin E and K.

Over the festive season, we tend to overindulge ourselves.

This may ruin all the hard work we've put in over the year to keep fit and healthy.

So this year why not opt for a healthier option that is just as sweet, has zero animal products and is low in calories?

I've got you covered with a light dessert that is vegan, healthy, and so easy to make.

You only three ingredients are required; fruit juice, agar-agar and a sweetener.

Agar Agar powder

For those who don't know, Agar-agar is a healthy, vegan substitute for gelatin.

It is a good source of many minerals such as magnesium, iron, vitamin B9, vitamin E and K.

It is also used in the treatment of diabetes and constipation.

If you're a big sweet tooth you may use honey or maple syrup as a sweetener.

Flexible ice cube trays may be used as a mould but it won't be as fun.

Instead, opt for fun-shaped moulds such as stars or ice cream Popsicle or a Lego man mould.

Because agar-agar has no taste or odour, it completely absorbs any flavours you bring to the dessert.

It doesn’t try to compete with its own flavours.

Preparation time: 15 min

Ingredients

Fruit juice (of a flavour of your choice)

250ml Agar agar powder

1 heaped tbsp Maple syrup/honey 2 tbsp

Instructions.

1. Place the mould in the freezer

2. Stir the agar agar and sweetener into the fruit juice until dissolved

3. Place the solution in a pan and bring it to a boil. Simmer for 5 minutes while stirring

4. Take the pan off the heat and let it cool for 2 minutes

5. Pour the jelly into the mould and place it in the freezer

6. Take the sweets out of the freezer after 5-8 minutes or once they have solidified and pop out of the moulds.

As these sweets are fresh they won't last as long as the normal sweets, store in the fridge and enjoy a few days after making.

Do not freeze for storage as the texture is ruined when they are frozen.

Enjoy the festivities without the worry of extra calories.
