Pumpkin leaves are one of the most loved vegetables by Kenyans in the Western parts of Kenya.

To make pumpkin leaves you are required to have the following ingredients.
Ingredients
- One bunch of pumpkin leaves
- One teaspoon of bicarbonate
- Salt
- Two tomatoes
- One bulb of Onion
- Oil
Preparation
Step 1
Remove the fibre from the outside of the stem and back of the leaf.
Then wash and chop the pumpkin leaves, tomatoes, and onions.
Step 2
Boil the pumpkin leaves, and while it's boiling add one teaspoon of bicarbonate.
Then let boil for about Five minutes.
Step 3
Fry your onions in enough oil until golden brown then add tomatoes and fry it until tender.
Then add your pumpkin leaves and cook it for about three minutes.
Step 4
When ready serve it with a hot ugali and enjoy your meal.
