Many people leaving in towns within Kenya enjoy sumptuous meals as a result of farming, fishing, netting among others.
In most cases when visited, the hosts will always leave a remark 'this fish came from my village'.
This has been a common terminology in most households with many enjoying fish whether it is roasted, deep fried, wet fry or dried.
But the question still remains, how is this fish transported to the cities?
Packaging
Fish or omena will always have an off smell.
So, if you are carrying it for a longer distance by use of public or private vehicle, you have to ensure it is well packaged.
A fresh fish from the lake has to be deep fried before it remains well preserved for a longer period of time.
After this procedure, you can leave it to dry before encasing it.
The most common way of wrapping it is the use of foil or a newspaper which is seen as the most affordable to many.
A cling foil is used as the first layer before an aluminum foil on top which acts as an 'icing for the cake.
With this, you are good to go.
You can either arrange them in a box and seal or put in a carrier bag otherwise referred to as 'uhuru bag'.
Easy Coach Company was on Tuesday forced to lift an order it issued banning its transportation following concerns from a section of passengers.
In a statement, the company said the move has been reached following complaints from its customers.
"The suspension has been lifted and you can now carry omena, mbuta, ngege and kamongo only as accompanied luggage on our buses on condition that it is appropriately packed," the statement read.
Freeze the fish
A fish can lose its flavor if it comes in contact with air and if you want it to stay longer, here are the methods for freezing.
A cooked fish should, however, not be frozen for more than three months.
Clean the fish then place it in a freezer safe Ziploc bag and before you zip, make sure to remove all of the air, or as much of the air as possible.
If you store fish often, consider buying an air tight package sealer. This works best when all the air from the package is removed as they are sealed, preventing the fish from losing its flavor.
Another way to freeze fish is in a solid block of ice. Use a refrigerator container. Place the clean fish into the container, but use only enough water to just cover the fish.
